Bruschetta

Hiya All,

I'm not sure did I ever mention but I'm the biggest fan of the Italian food. It's hard to pick one dish that I love the most. I've chosen to show you quite a simple recipe for bruschetta. So what's bruschetta:

Bruschetta (Italian pronunciation: [bruˈsketta]  is an antipasto from Italy whose origin dates to at least the 15th century. It consists of grilled bread rubbed with garlic and topped with olive oil, salt and pepper. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese; the most popular recipe outside of Italy involves basil, fresh tomatogarlic and onion or mozzarella. (wikipedia definition)

It's such a simple dish but it's delicious! So what do you need to prepare it:

- white bread (I think ciabatta work the best)
- tomatoes
- basil
- garlic
- extra virgin olive of oil
- salt & pepper

For one ciabatta roll I used only one garlic clove. You can either rub the bread with garlic or you can chop it into small pieces and add it to tomatoes.

As I'm adding a raw garlic to tomatoes I don't want to harm my stomach. To make is softer and tastier I mix chopped garlic with olive of oil and I also add salt and pepper. Make sure to leave for a few minutes.

Next prepare tomatoes. I tend to peel the skin- you don't have to do it. Remove the hard bit from the middle and the use the spoon to get rid of the seeds.

Chop tomatoes and add as much basil as you want. Add additional spices.

Now it's time for our ciabatta to go to the oven. The idea is to grill it aound 1 minute on each side. Well it depend how crusty do you want the bread to be:-)

Add chopped garlic to tomatoes.

Drizzle olive of oil on the bead and divide it to more manageable pieces.

And here we have home made Bruschetta:-)
